Xanthan gum is a natural polysaccharide obtained by fermentation of sugars by the bacterium Xanthomonas campestris.

Formula

White or light yellow powder, highly soluble in water, forms viscous solutions even at low concentrations. Has properties of thickener, stabilizer and emulsifier.

Application

thickener and stabilizer in sauces, mayonnaises, ketchups, yogurts, desserts, ice cream, beverages, improves texture, prevents separation, retains moisture.
